Sushi is at the core of the Umami experience. Here the classic Japanese approach is infused with a Nordic touch revealing a unique quality inherent in both cuisines where simple aesthetics and clean flavors meet to create a new culinary experience. Our sushi is neither overly decorated nor pretentious, it is honest, tasteful and an expression of whom we are. In an ongoing effort to perfect our sushi we travel to Japan to find new inspiration and classic recipes founded in a proud culture of cooking. Here we discovered the unparalleled taste of freshly grated wasabi root, which we brought back to the kitchen and now serve at the table using a classic Japanese sharkskin grater.
This freshness is reinforced by our ongoing commitment to use seasonal and regional produce such as lumpfish roe, halibut, turbot and mackerel. We keep pushing our suppliers to bring us uncompromising ingredients every single day, so we can continue serving world-class sushi to our guests. In March 2013 our head sushi chef Pepi Anevski travelled to the sushi world championships in Japan doing exactly the same as he does everyday at Umami: creating simplistic and beautiful sushi full of taste and vision. We were honored by his success and are still unbelievably proud that he brought home the title to Denmark and Umami for the first time ever.
